Cafe In the Undergrowth is our festival catering operation which we like to take on the road every year to where ever possible. Hopefully bringing a little of the collective ethos out of our Mancunian Backyard and into our cafe in the Undergrowth.
Our Set Up
We have a 12ft x 6ft self contained catering trailer with one free standing 9 ft square gazebo for prep at the back and our trailer has a fresh and exciting new ‘in the undergrowth’ themed facia design. We have a number of tables and chairs available for the space around our set up and an urban garden surround. We bring plant pots and greenery to brighten up the space and add interest with our guerrilla, graffiti, reclaimed garden decor.
What we provide
Our menu includes Our Festival Famous Chilli & Nachos, A range of 6 different types of vegan or veggie burgers, something for everyone, served with homemade salsas and sauces and fresh salad. We also offer 2 varieties of fresh homemade soups and other tasty snacks and homemade cakes. Where appropriate we provide breakfast baps of eggs and veggie sausages, omelettes and cereals or porridge.
We also offer fancy teas, coffee, hot chocolate, water and a variety of whole earth tasty carbonated cans.
We offer wheat, lactose and gluten free options in all of our catering.
Our Cooking Ethics
We aim to be conscious caterers operating to a LOAF Standard (Local, Organic, Animal Friendly and Fairtrade) . All our products and services are vegetarian or vegan, cruelty-free and fairly traded wherever possible. We use biodegradable or recycled plates and cutlery and recycle all of our own waste providing appropriate bins with our set up.
We also use bio diesel in our vehicles.
Together our cooks promote the physical, mental and spiritual well -being of the community, and our customers the collective mentality by trading without the exploitation of our employees, the planet and ourselves, to create a more sustainable future.
